CLASSICAL—BLACK FOREST CAKE
1. The classical dessert comprises three layers of chocolate cake.
Each layer is topped with piped whipped cream and cherries in
alternating rings, which form a bull’s-eye pattern. Once a layer is
complete, another layer of chocolate cake is stacked on top and
the process continues to build the cake’s structure. 2. The cake
is iced in the same whipped cream that is used for the layers.
3. Whole Bing cherries are arranged on piped whipped cream
to complete the top of the cake. 4. Chocolate shavings line the
sides of the cake to finish the dessert.
MODERN—BLACK FOREST CAKE
1. In the modern version of the dessert, the chocolate cake is
cut into disks to serve as the base. 2. The cherry gelee adds a
component of surprise when the mousse bombe is cut. 3. The
vanilla-bean mousse encapsulates the cherry gelee and gives
the dessert its dome-like shape. 4. The red mirror glaze is poured
over the mousse bombe and punctuates the dish with its vibrant
color. 5. A minted cherry salad is paired with the dessert to provide
a variation in color and texture. 6. The airbrushed cocoa design
enhances the presentation. 7. A tempered chocolate filigree serves
as an ornate garnish for the dessert and completes the dish.
